Chocolate Oatmeal Chocolate Chunk White Chocolate Chip Cookies.

Yes, that's what they are called. You can comment on this post with a better name for them and I just might take your suggestion into consideration. My iphoto album for these cookies is definitely titled "choc oatmealchocchihchoochocookies." I apparently couldn't get through it one more time. I need help.


They are super delish. SUPER. I had to get rid of them as fast as possible to keep myself from eating them all! Once they were cool I practically ran to my friends' various apartments and threw the cookies at their faces.

I'm watching my weight.

HAHAHAhahahaha. Oh man, yah right about the weight watching.
But I really did throw cookies at people. Almost.

Ingredients:
1 cup flour
3 tbsp cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 cup butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 tsp vanilla
1 1/4 cup rolled oats
lots of chocolate chunks and white chocolate chips

Preheat oven to 350. Stir together the flour, cocoa, baking powder, baking soda, salt, and cinnamon. In a large bowl cream the butter, brown sugar, and white sugar together.  Beat in the egg and vanilla. Stir in the dry ingredients. Once well mixed, stir in the oats, chunks, and chips. As many as you want!

Shape into really large portions of heaven and bake for 8-10 minutes. Allow them to cool for about 5 minutes before removing from the baking sheet to a cooling rack.

Deep Dish Cookies.

Deep Dish Cookies (inspired by many sites).

I've been seeing a lot of blog posts and pins about deep dish cookies. I couldn't resist! Especially since I recently bought the cutest ramekins ever.


Basically, the secret is to fill ramekins half full with your favorite cookie dough, bake for a little bit longer than usual, and scoop ice cream on top. Eat them before they cool off!


Here is the recipe I used for mine:

Ingredients:
2 1/4 cups  flour
1 tsp salt
1 tsp baking soda
2 sticks softened butter
1 cup sugar
1 cup brown sugar
2 eggs, beaten
1 tbsp vanilla
1/2 cup cocoa
2 cups chocolate chips

Preheat oven to 375. Sift together flour, salt, and baking soda. In another bowl stir together butter, both sugars, eggs, vanilla, and cocoa. Gradually stir in flour mixture and mix well. Stir in way too many chocolate chips.

Fill ramekins 1/2 full with cookie dough. Place ramekins on a cookie sheet and put in the middle of the oven. Bake 12-18 minutes, or until tops look fully cooked. The insides should be slightly undercooked but not too doughy.

Remove from oven, top with a few scoops of ice cream, grab a spoon, eat your heart out!!!

Cheesecake Chocolate Chip Cookie Bars.

Cheesecake Chocolate Chip Cookie Bars (adapted from Heat Oven to 350).

Seriously, go back and read the name of this. Cheesecake. Chocolate chip. Cookie. Bar. I have no words except for these: Heavenly deliciousness in your mouth.

Ingredients:

1/2 cup unsalted butter
1/2 cup butter flavor shortening
1 cup brown sugar
1/2 cup sugar
2 tsp vanilla
3/4 tsp salt
1 large egg
1 tsp baking soda
2 cups flour
2 cups chocolate chips

8 oz cream cheese, softened
1/2 cup sugar
1 egg
1/2 tsp vanilla

Cream together butter, shortening, sugars, vanilla and salt in a large bowl. Beat in the egg, then the baking soda and flour. Mix in the chocolate chips, divide the dough in half, and set aside.

In a separate bowl, cream the cream cheese with 1/2 cup sugar. Beat in 1 egg and 1/2 tsp vanilla.

Spread 1/2 the cookie dough on the bottom of a 9x13 pan. 

Spread the cream cheese mixture over the cookie dough.

Flatten chunks of the remaining cookie dough and place them near each other on top of the cream cheese layer. Just try to cover the surface as well as possible.

Bake at 350 for 35-45 minutes or until the top is browning. Cool completely, store in the refrigerator. Try not to eat them all in one sitting.

Graduation Cookies.

Graduation Cookies (from my roommate's friend, thanks Audrey!).

Alright, so I renamed them graduation cookies. The actual content of the cookies has nothing to do with graduation, BUT I had just received my cap and gown before I started baking. I was a little bit excited. I wore my graduation cap the whole time I made these cookies. Don't judge me; you would have done it too.

They are basically oatmeal chocolate chip cookies, but they are GOOD. They are best warm out of the oven, so be prepared with either an empty stomach or a lot of friends.


The cookies were absolutely divine! Here's how you make'em:


Ingredients:
1 cup shortening
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1tsp vanilla
2 cups flour
2 cups oats
1 cup chocolate chips

Cream together shortening, sugar, brown sugar, eggs. Sift together the soda, powder, salt, and flour. Combine both mixtures. Stir in vanilla, oats, and chocolate chips.

Bake at 350 for 10-12 minutes.

Blueberry Cream Cookies.

Blueberry Cream Cookies (from Heat Oven to 350)
These aren't your average cookies. And it's a lot harder to find dried blueberries in April than you'd think.  My 3rd grocery store was a charm.  Anyway, when I described to a non-baker that these were "summer cookies," they looked at me as if there was no such thing as a cookie for a specific time of year. Come on people! Christmas time has its own cookies; why can't summer?


They are thin, crisp, and less sugary, buttery, and oily than any triple-chocolate-hand-dipped-add-some-whip-cream-cookies. But don't get me wrong, they are still fantastic. People kept coming back for more, and when my last one was eaten, a little piece of me died.


They are the perfect mix of fruit and sugar and beauty. They take a little longer than your average cookie, but thats because they are waaayyyy above average.

2 1/2 cups all-purpose flour 1/4 tsp baking powder


1/8 tsp baking soda
1 tsp salt
1 cup unsalted butter, softened
1/2 cup plus 2 tbs granulated sugar
1/2 cup plus 2 tbs light brown sugar
1/4 cup corn syrup
1 large egg
1 cup dried blueberries
1 recipe Milk Crumbs (see below)

Milk Crumbs:
1/4 cup plus 1 T nonfat dry milk powder
2 T all-purpose flour
1 T cornstarch
1 1/2 tsp sugar
1/8 tsp salt
1 1/2 T unsalted butter, melted
1/4 cup white chocolate, melted


To make the milk crumbs, heat up the oven to 225. In a medium bowl, whisk together 2 tbs and 1 1/2 tsp of milk powder, the flour, cornstarch, sugar and salt. Stir in melted butter until well combined. Spread mixture on baking sheet and bake until dried and crumbly, 8 to 10 minutes. Let cool. They will look 
almost exactly the same. Surprise:
Transfer milk crumbs to a large bowl and mix in remaining 2 tbsp plus 1 1/2 tsp milk powder and white chocolate. Set aside.


For the cookies: Preheat oven to 375. Sift dry ingredients together (flour, baking powder, baking soda, and salt). Set aside and cream together butter, sugars, and corn syrup until combined.  Add your eggs and mix again. 
Pour in the dry mixture a little bit at a time and mix in until you get cookie dough! Mix in the milk crumbs and dried blueberries until just mixed. Shape dough into balls and place onto baking sheets.
Bake at 375 until cookies are golden brown and tops begin to crack. It took mine about 11 minutes, and I made about 3 dozen cookies.
I obviously couldn't decide which pictures to use. They were just too pretty!!

Cadbury Egg Cookies.

Cadbury Egg Cookies.
(from a conglomerate of places, but mostly this one)


Ingredients:
1/2 cup butter-flavored shortening
1/2 cup melted, unsalted butter
1 cup brown sugar
1 cup sugar
2 beaten eggs
1 1/2 tsp vanilla
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 1/2 cups flour
6 tbsp cocoa powder
1 bag miniature Cadburry eggs

Preheat the oven to 350.  Crush your chocolate eggs in a bag with a rolling pin, mallet, or a hammer if you are as awesome as me and your neighbors already hate you from the time you smashed Lemonheads so it doesn't really matter if you do it again.

Cream the butter and sugars until the are light and fluffy. Add the eggs and vanilla. Mix all the dry ingredients in a separate bowl and then slowly add it into the wet mixture. Add the Cadbury eggs and beat a couple more times.  You want to dough to be a little wet, these cookies are supposed to turn out brownie-like.


Drop balls of dough onto a cookie sheet and bake for... drum roll... EIGHT minutes! That's right, you are only 8 minutes away from heavenly bliss. 



Then hurry and distribute them onto paper plates and deliver them as fast as you can to keep from having enormous love handles. Because once you pop, you just can't stop.

Lemon Drop Cookies

Lemon Drop Cookies

My mom sent me this recipe yesterday afternoon and I went straight to work on them! They sounded and looked so fun!

3 cups of flour
1 tsp baking soda
1/2 tsp salt
1 1/3 cup sugar
1 whole lemon (zested)
1 cup butter
2 eggs
1 tsp vanilla
1 1/2 tsp lemon extract
4 oz. Lemon Drop or Lemon Head candies (crushed)

Glaze:
3 tbsp lemon juice (from the lemon)
1 1/2 cup powdered sugar

My two new skills: crushing hard candy in the most annoying way possible, and zesting a lemon!
And before we get started, behold my new mixing bowls from the most heavenly place on Earth:
In a beautiful medium bowl, mix flour, baking soda, and salt.  In a separate beautiful bowl, add sugar and lemon zest. Use your fingers to rub together until it is well blended and fragrant.  Add softened butter and cream together.  Blend in eggs, vanilla, and lemon extract. Mix in crushed lemon drop candies.  Add flour mixture and stir until mixed in.

Drop 1 inch balls onto a greased cookie sheet. Flatten balls slightly with your hand. Bake at 350 for 10-12 minutes until slightly browned. While your cookies are cooling, press your thumb into the middles of them to make an indentation so the glaze will stay on top better. You can thank my beautiful roommate Kendra for that tip.
The glaze is simply the lemon juice and powdered sugar mixed together. Once the cookies are cool, spoon glaze on top. The glaze takes a while to set before the cookies are transportable.

Monster Cookies

Recipe 2.

I've had these before and remembered them being a hit, and hoped the recipe's name rang true throughout the internet. They did! And they were a hit again. Fifty-two cookies gone in less than 24 hours. Make them. Really.

3 eggs
1 1/2 cups brown sugar (packed)
1 cup white sugar
1 tsp vanilla
1 tsp corn syrup
2 tsp baking soda
1/2 cup butter
1 1/2 cup peanut butter
4 1/2 cups rolled oats
1 cup semisweet chocolate chips
1 cup M&M's

I know, right? Everything good, ever, is in these cookies.

Just beat the eggs and keep mixing while you add everything (in order). Stick ice-cream-scoop-sized chunks into the oven at 350 degrees. 12-15 minutes later pull them out and have the best night of your life!
